Zucchini and Orzo Pasta w/More Chimichurri

1 cup More Chimichurri
1 cup Orzo pasta
1 medium zucchini
1 small red onion, minced
1 pint grape or cherry tomatoes, halved
Salt and pepper
*Option to sauté zucchini in Sauce Boxx flavored butter
**Option to add 1/4 cup feta crumble cheese, or mozzarella pearls
***Option to finish with squeezed lime
Cook Orzo pasta according to package.
Drain and let cool.
Cut zucchini in half, lengthwise, then again in half down the middle.
You should have 4 long pieces of zucchini.
Then slice into 1/2 inch chunks.
Sauté zucchini on medium in oil or 2 tablespoons of Sauce Boxx flavored butter (like Loaded Garlic & Herb or Cowboy Butter!) stirring occasionally for about 10 minutes.
You can also grill or roast the zucchini!
If roasting, toss with a little oil and season with salt.
Roast at 400* F for 20 minutes.
Prepping Other Ingredients
While zucchini and pasta are cooling, slice the tomatoes in half.
Once zucchini and orzo are no longer steaming hot, combine them in a bowl with the tomatoes.
Pour More Chimichurri and toss until coated.
*Option to add in feta cheese crumbles or mozzarella pearls, or fresh squeezed lime.
