Loaded with Flavor & Fancy to the eye - this Stuffed Bell Pepper is surprisingly easy and addicting with our creamy Spicy Tomato Kertz and totally satisfies your soul.

Ingredients
- 1 jar Sauce Boxx Spicy Tomato Kertz

2 - 3 tablespoons Sauce Boxx Cowboy Butter
6 bell peppers (red, yellow, or orange brings a sweetness to the dish)
- Oil
1 pound ground beef
1 medium onion (chopped)
1/2 cup corn (frozen, roasted, cooked corn on the cob)
1 cup grated Parmesan cheese (divided into 3/4 cup & 1/4 cup)
1 cup rice
2 cups water
Salt & pepper
2 tablespoons chopped cilantro (for garnish)
Directions
Add 1 cup rice, pinch of salt, and stir.
Cover rice with lid and turn heat down to low.
Simmer for 15 mins -- do not lift lid while cooking.
- When finished and add 2 Tb of Sauce Boxx Cowboy Butter and stir until well combined. Smell that garlic? See those pretty flakes? Mmmm I know! Soooo good!
- On med-high add ground beef to hot pan. Break up meat with wooden spoon and stir for 1 min.
- Add diced onion and stir to combine
- Cook meat and onion about 6 mins. Meat will no longer be pink and onions will be translucent
- Add frozen or cooked corn to meat mixture for 1 minute to heat corn
- Drain fat from pan when complete and add back to pan
Cook the Meat mixture
On med-high add ground beef to hot pan.
Break up meat with wooden spoon and stir for 1 min.Add diced onion and stir to combine.
Cook meat and onion about 6 mins. Meat will no longer be pink and onions will be translucent.
Add frozen or cooked corn to meat mixture for 1 minute to heat corn.
Drain fat from pan when complete and add back to pan.
Combine Stuffing Mixture
Add rice to beef mixture and top with 1 cup of Sauce Boxx Spicy Tomato Kertz and stir until combined.
- Smells amazing right? Take a sneaker taste... Shhh! No ones looking. You're the cook, you totally can!
Add 3/4 cup parmesan cheese and stir together.
- Drizzle Olive Oil over bell peppers and rub down. This will help the peppers cook in the oven.
- Time to stuff the bell peppers with the rice and meat mixture. Use your spoon to fill bell peppers with as much mixture as it holds.
- Top each bell pepper with 1-2 Tb of Sauce Boxx Spicy Tomato Kertz.
- Cover with foil and add dish to preheated oven
- Cook for 35 mins. Peppers should be tender. Mark as complete
- Remove foil and top with remaining Parmesan Cheese
- Heat cheese in hot oven - about 2 -3 mins
- Garnish with chopped Cilantro and serve while hot
- ENJOY -- and you will! Mark as complete
