Pulled Pork Sandwiches w/Smokey Achiote Sauce
1 lb Pork Shoulder, marinated in the Smokey Achiote
4 Telera or Kaiser rolls
1/2 cup refried beans
1/3 cup Mayonnaise
2 cups shredded lettuce
2 plum tomatoes, sliced
1/2 medium white onion, thinly sliced
1 avocado, thinly sliced (optional)
*Option to add pickled peppers
To make the sandwiches, start by cutting open the rolls you're going to use.
Spread Mayonnaise on one half, and refried beans on the other.
Spoon on some of the shredded pork, then top it with some shredded lettuce, one or two tomato slices, and a couple of white onion slices.
This pork in Achiote is usually served with pickled jalapeño peppers or pickled habanero peppers, depending on the region.
