Hello new easy weeknight meal, that is like, so satisfying you want extra for lunch the next day.. Heeeelllloooo :)
Your kids will eat it, your spouse enjoys it, and you just want more of it. Sweet, salty, filling, easy, addictive. You know, all the things you love in a meal.
Huli Huli & Carrot Ginger Dressing is the perfect Asian marriage and no one is made about it.

Ingredients

1 cup Carrot Ginger Dressing

2 Tb Cowboy Butter
-
1/2 cup Huli Huli
1 cup Jasmine rice
1 lb chicken, breast or boneless skinless thighs
1/2 cup lettuce, chopped
1 Tb sesame seeds (optional) for garnish
2 green onions, slices diagonal for garnish
Salt & Pepper
Directions
Cook the Rice
Bring 2 cups water and 1/2 tsp salt to a boil. Add 1 cup rice, stir, and reduce heat to low. Cover and cook for 15 mins or until water is absorbed. When finished cooking add 2 TB cowboy Butter and stir to incorporate through out rice.
Cook Chicken
Chop 1 pound of either boneless skinless chicken thighs or chicken breast into 1 - 1.5" cubes and season with salt. Using a medium size pan, heat on medium and add chopped chicken and Huli Huli sauce. Cook, stirring occasionally, for 5 mins or until chicken is fully cooked.
+Option to Marinade chicken in Huli Huli ahead of time.

Add Rice to cooked chicken & Huli Huli and stir to combine. The rice will absorb all of the juices and the sauce - and it will be to die for!
Assemble the Bowl
Start off by layering your bowl with 1/4 cup of rice, then chicken, lettuce, green onion, and sesame seeds.
Top bowl with Carrot Ginger Dressing and eat with your eyes rolling back in head. Wait! Stop. You forgot to take a picture and post on Social Media.
