Huli Huli Pineapple Fried Rice
I love to make this recipe for my kids. When they're happy - everyone wins. I also get a chance to upgrade my leftover rice with ease and turn it into something fabulous. I love the flavor and the pop of colors this rice provides. From the green scallions, red bell pepper, to the yellow pineapple. Such a great side dish, or make it a full meal by adding chicken.
1/2 cup Sauce Boxx Huli Huli
2 Tb vegetable oil
1/2 onion, finely chopped
1/2 red bell pepper, diced (3/4 cup)
1/2 cup frozen peas
3 cups day old rice, cooked
1 1/2 cup pineapple pieces (fresh or canned)
1/2 cup green onion, sliced
Heat oil in a non stick skillet over high heat
Add onion and cook for 1 minute
Add red bell pepper and cook for 1 minute
Add frozen peas, stir for 90 seconds
Add rice and Huli Huli Sauce. Cook, stirring constantly for 2 minutes. Rice should go from wet to fried (or carmelised)
Add pineapple chunks and stir for 30 seconds to warm.
Top with green onions and serve.
