Chicken Penne Casserole with Basil & Pepita Pesto and Everything Basil Sauce

We love this recipe because it gives your family a fast, easy and delicious meal now and later. One casserole can be cooked for dinner tonight while the other one is saved for a quick meal later in the month. Nothing like two meals for the work of one!

Ingredients

1 jar (12oz) Sauce Boxx Everything Basil Sauce

1 cup Sauce Boxx Basil & Pepita Pesto
- 1 Package (16 oz) Penne pasta
6 cups cubed cooked chicken
4 cups shredded Italian cheese blend
3 cups fresh baby spinach
1 can (15oz) crushed tomatoes
1 and 1/2 cup 2% milk
1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
- 1 tablespoon Olive oil
Directions
Cook pasta according to package directions.
While the pasta is cooking, in a large bowl, combine the chicken, cheese blend, spinach, tomatoes, Everything Basil Sauce, milk and Basil & Pepita Pesto.
Drain pasta and add to chicken mixture; toss to coat.
Transfer to 2 greased 8-in. square baking dishes.
In a small bowl, combine the bread crumbs, Parmesan cheese and oil; sprinkle over casseroles.
Cover and bake one of the casseroles at 350° for 40-45 minutes or until bubbly.
Freezer Casserole
Cover and freeze the second casserole for up to 3 months.
When ready to cook, thaw in the refrigerator overnight.
Remove from the refrigerator 30 minutes before baking.
Cover and bake at 350° for 50-60 minutes or until bubbly.
